Top chef opens Macao restaurant in tune with the seasons

Renowned Cantonese cuisine chef Tam Kwok Fung opened his conceptual restaurant at Wynn Palace in Macao this month.

Chef Tam's Seasons artfully marries the traditional Chinese cultural gem of the 24 solar terms with the exquisite world of Cantonese cuisine. Guided by the rhythms of time, precision, and the five essential flavors, Chef Tam's Seasons gathers the essence of each season's bounty, infusing it into its culinary offerings.

Tam stands as the recipient of countless accolades, having repeatedly guided his establishments to Michelin star distinctions. He has also earned the esteemed Diamond recognition in the Black Pearl Restaurant Guide and secured a spot on the list of Asia's 50 Best Restaurants.

I venerate the seasons, focus on authentic flavors, and strive to uphold the essence of Cantonese cuisine. I blend Eastern and Western influences and introduce modern concepts and techniques, infusing traditional Cantonese dishes with new vitality. I hope that guests at Chef Tam's Seasons can experience the heritage and innovation of Cantonese cuisine in Macao.

For years, he has diligently championed Cantonese culinary culture on the global stage. Notably, this year, he clinched the illustrious title of Chef of the Year in the Black Pearl Restaurant Guide, marking him as the pioneering chef in Macao to attain such an honor.

Tam pays reverent tribute to China's traditional culinary heritage through his meticulously crafted seasonal tasting menu, centered around the 24 solar terms. As the seasons gracefully shift and the solar terms ebb and flow, he presents a fleeting array of ingredients at their peak.

At the new restaurant, the ingredients meticulously selected go beyond embracing local seasonal produce that they also encompass a diverse range of international elements.

With each change of the solar term, Tam will craft a bespoke Seasonal Nourishing Soup, exemplifying the cultural tradition of dietary enrichment deeply rooted in Cantonese cuisine.

According to him, in addition to the regular chef's seasonal tasting menu, the restaurant will also offer a personalized dish customization service, delivering a more intricate and individualized dining experience for guests.
